In an interview, Max Geiger, the computer 'wizard', said that the original numbers from the various test performed on the show were put into 'Calc' the Open Office spreadsheet program. That appears to be the program running when the show says that all the data is in. These crunched numbers go into a simulator. Please note the interview uses somewhat coarse language.
An article from the Seattle Martial Arts Center states that the simulator is a version of Slitherine Software's "Great Battles of Rome" game which has been modified to deal with individual fighters instead of armies. In the Geiger interview, he does state the software was modified from armies to individuals. In any case, the simulations are not computer graphics. It is a program from the CAD (Computer Aided Design) family. Can't really tell for sure which one but it kindof looks like Auto CAD or has some greatly similar functionality.
Auto CAD is used for very similar purposes. You can create bodies with various characteristics (weight, height, resistance, etc) and then simulate their interaction in various environments and possible effects of interaction (for example collision at various speeds, etc). It is a widely used engineering and design software.
